A craze has been sweeping the nation and it’s popping on everyone’s social media feed. No, it isn’t the new witch starter pack at Sephora that every millennial beauty queen is anticipating. It’s much simpler than that. It’s the sweet potato toast fab that every foodie wants to give a go.
Sweet potato "toast" is a fan favorite right now on all social media. It’s become a gluten-free alternative to bread, which allows those who are intolerant to get nice and toasted. On top of that, sweet potatoes offer a whole lot more nutrients than a plain ‘ol loaf would like a ton of fiber and vitamins.
The best part, sweet potato toast can be made in a snap. Here's how you do it:
Scrub a sweet potato clean (you can leave the skin on!) and cut into 1/4-inch slices. (This works best if you start by lobbing off part of the side to make a level surface, then placing the flat side down on the cutting board.)
Pierce each slice with a fork to help steam escape and improve the texture.
Par-cook in the microwave for 3 minutes, flipping halfway through.
Toast on the highest setting of your toaster until tender when pierced with a fork.
Note: You can also bake sweet potato toast in an oven or toaster oven at 450 degrees F until tender (about 20 minutes), turning halfway through. But that takes too long, so nab a toaster instead like our Retro Toaster below.
Toasts can be eaten with savory or sweet toppings. For the savory style, we like to top ours with chicken salad, bacon and sliced avocado. And for a sweet treat, smear the slices with your favorite nut butter and crunchy toppings. Our CEO Edward likes cashew butter, honey and toasted coconut flakes. Other topping ideas include poached eggs, hummus, PB and J, tuna salad or chocolate-hazelnut spread. Don’t limit yourself because the flavor combinations are endless!
